Pour-over coffee

A step-by-step guide to making pour-over coffee in the van.

A gooseneck kettle, OutIn grinder and mug on Nellie's galley counter, with pines outside the open door

At a glance

Beans
15.5 g
Grind
Just under #7 (OutIn)
Water
201–204°F
Bloom
50 g, 30 seconds
Total water
250–260 g

What you need

Power and water

  1. Turn on the inverter.
  2. Turn on the water pump.
  3. Plug in the kettle.
  4. Set the kettle to between 201 and 204°F by turning the knob.
  5. Press start.

Grind the beans

  1. Get the scale out and turn it on with the switch on the side.
  2. Grab the OutIn grinder and give the top a slight twist to open the hopper. Turn the dial to just under #7 for pour-over (the grinder has a size guide).
  3. Set the grinder on the scale and press the zero button (bottom-right corner).
  4. Pour 15.5 grams of beans into the top.
  5. Give a slight twist to close the hopper.
  6. Press and hold the button on the front for 2 seconds to start grinding. It stops on its own when it's done.

Brew

  1. Place the mug on the scale and put the brewer on top.
  2. Grab a filter and fold it along the side and bottom seams. Place it in the brewer.
  3. Rinse the filter with hot water, then dump the rinse water out of the mug.
  4. Place the mug back on the scale.
  5. Unscrew the bottom of the grinder and pour the grounds into the brewer.
  6. Zero out the scale (bottom-right corner).
  7. Grab the kettle and press the timer button on the scale.
  8. First pour: about 50 g. Go slow, covering all the grounds evenly.
  9. Bloom: let it sit for 30 seconds.
  10. Second pour: at 30 seconds, pour in slow, even circles up to 150 g. Wait until the timer reaches about 1:15.
  11. Final pour: at 1:15, pour up to 250–260 g total.
  12. Let the water draw down, then toss the filter in the trash.

Or, a quick AeroPress

Short on time? Nellie also has an AeroPress. This is AeroPress's own standard recipe for one cup. It takes about two minutes.

  • AeroPress and paper filter
  • Kettle
  • OutIn grinder and scale
  • Mug
  • Whole beans
  1. Turn on the inverter and water pump, and set the kettle to 185°F. Press start.
  2. Pull the plunger all the way out of the chamber.
  3. Put a paper filter in the filter cap and twist the cap onto the chamber.
  4. Stand the chamber on a sturdy mug.
  5. Grind 16–18 grams of beans medium-fine (a little finer than pour-over) and pour them into the chamber. Give it a gentle shake to level the grounds.
  6. Pour water up to the 4 on the side of the chamber. A little coffee will drip into the mug. That's normal.
  7. Stir gently for about 3 seconds.
  8. Push the plunger in about ½ inch, then pull it up slightly. That stops the drip.
  9. Wait 30 seconds.
  10. Press down slowly with gentle, steady pressure. Stop when the hissing starts and ends.
  11. The filter cap is hot. Rinse it under cool water or use a towel to take it off.
  12. Hold the AeroPress over the trash and push the plunger the rest of the way. The grounds pop out as a puck.
  13. Toss the filter, rinse the cap and chamber, and let them dry.

Enjoy.
